Today, I am sharing with you my after meal light sweet treat recipe. This treat I grew up with and my mom, who still lives in Ukraine, didn't like to bake, so this was a regular sweet treat that I ate during my childhood. NO BAKE SWEET TREAT!

Ukrainian style walnut-stuffed prunes are healthy and easy to make. These are even fun to make with the kiddos. Cooking with kids is Important.

I often cook my home country's food, which causes me to often think about my home town and the danger that is there. The war is still raging and my family in Ukraine is always on my mind.

Now my mom describes how a new cemetery gets built every few months. It is a very scary time in Ukraine. My mom is turning 82 next month and with every day that passes, the chances for her to physically see my children and to meet my youngest daughter are few.

Prunes are so many ways are just superfood. Good source of antioxidants, fiber, minerals and nutrients. And of of course great substitute for sugary snacks.

I think can help with sugar cravings. Specially when you consume with fat rich food such as walnuts, helps slow down the spiking of sugar.

In the video I whisk together a heavy cream & crème fraiche (I can call it Ukrainian sour cream and we used for so many dishes sweet and savory its one of those must item in my fridge). Honey & spirits

Honey is always a better alternative to sugar. And a good quality honey is a beautiful addition. Just a bit of honey sweetness adds a little extra goodness to these Traditional Ukrainian Walnut Stuffed Prunes with Creamy Topping .

Spirits you can totally substitute with a fruit tea.

Clarified butter or Ghee - it is nice addition to this dish, but if you in pinch of time, skip it and use raw nuts.

A few words about substitution of ingredients for Walnuts Stuffed Prunes with Creamy Topping

There are only a few ingredients needed and you can find them at any grocery store. Prunes are the star of the show and the rest can be substituted. Look for a sulfate free option, I like these kind. If you are not able to use walnuts then use pecans, macadamia nuts, cashew, etc. For the sweetener, if honey is not your option, use maple syrup or spirits. If alcohol is not what you like to use, skip and use fruit tea. And last but not least, heavy cream and crème fraiche.

Prep Time: 5 minutes

Soaking time: 30-60 minutes

Making time: 20 minutes

Ingredients

2 &1/2 cups of prunes

2 cups liqueur of your choice (I used in the video orange liqueur, cognac would be nice too, or use fruit tea for alcohol substitution)

1/2 teaspoon pink salt

1 tablespoon clarified butter or ghee

2 cups heavy cream, cold

1/4 cup raw honey (plus a few more tablespoons for drizzling)


Directions

  • First soak the prunes in the alcohol liqueur of your choice. The liqueur  can be soaked for an extended period of time to enhance the flavor.

  • Sauté the nuts in a pan with clarified butter, until the nuts look glossy and slightly darker. You should smell the aroma from nuts. Now let them cool.

  • Stuff each prune with one half of a walnut. Place them on a platter.

  • To make the creamy topping, whisk all together the heavy whipping cream, honey and crème fraiche until it is nice and stiff.

  • Generously cover stuffed prunes with the creamy topping and drizzle with honey.
