Today my attention is about sharing with you my all time favorite appetizer. I promise that when you serve these bad boys the only thing that will be left is an empty platter.

What do I need to make Three Cheeses Bacon-Wrapped Jalapeños?
To make Three Cheeses Bacon-Wrapped Jalapeños, you'll need the following ingredients:
Jalapeños - medium size Jalapeños peppers, or do like I did in the video and use a combination of large and small. Also consider using different colors too: makes for an eye appealing colorful dish. But it's up to you. Keep in mind that you are the boss of your appetizer.
Bacon - thin, or medium thickness. I would not recommend thick unless you are willing to slightly precook it. I always recommend the best quality that you can afford, which means less preservatives and uncured.
Cheese - I used in the video 3 cheeses: Gruyère, Parmesan, and Cream Cheese. If you can't find Gruyère, use any good melting cheese (fontina, cheddar, baby Swiss, etc.)
Herbs - I had on hand parsley and some scallions, cilantro would be great too.
Onion - shallot or use a scallion, the white part only and chop very fine, like I did in the video.
Garlic powder, salt, and freshly ground black pepper.

Ingredients
12-14 large jalapeño peppers (red and green combo is great)
1 cup cream cheese, softened
2 cups shredded Gruyère cheese
1/4 cup grated Parmesan cheese
1/2 cup chopped fresh parsley or cilantro
1 shallot or young onion, finely chopped
1 teaspoon garlic powder
Salt and freshly ground black pepper to taste
10 strips of thinly sliced bacon (medium thick is ok too, avoid thick cut bacon)
Directions
Preheat the Oven: Preheat your oven to 375°F (190°C).
Prepare the Jalapeños: Slice the jalapeños in half lengthwise.
Remove the seeds and membranes carefully (use gloves!).
Make the Cheese Filling: In a bowl, mix the cream cheese, Parmesan and Gruyère cheeses. Add finely chopped onion and herbs (parsley in my case), garlic powder, salt, and pepper until well combined.
Stuff the Jalapeños: Spoon the cheese mixture into each jalapeño half, packing it in.
Wrap in Bacon: Wrap each stuffed jalapeño with a strip of bacon. Secure the bacon with a toothpick if needed. I didn't do it in the video.
For extra crispiness, or if dealing with thick cut bacon, you can partially cook the bacon in a pan for a few minutes before wrapping, but this is optional.
Prepare for Baking:
Place the bacon-wrapped jalapeños on a baking sheet lined with parchment paper or a wire rack set over a baking sheet (to allow excess fat to drain). At this point you can freeze or bake it.
Bake:
Bake for 25-30 minutes, or until the bacon is crispy and the cheese is melted and bubbly. If needed, you can broil them for the last few minutes to get the bacon extra crispy, I did 5 minutes, but keep an eye on them because they can burn very easily.
Serve:
Allow the bacon-wrapped stuffed jalapeños to cool for a few minutes before serving. Enjoy them warm.
