3 different kinds of sandwiches

Even though I'm not a sandwich person, once in a while I do like them for breakfast, lunch or even a quick dinner with a big side salad of course. Sandwiches are vehicles that enable you to include many things such as veggies, herbs, etc. that you don't' even know you are consuming.

In my mind when it comes to crafting a delicious sandwich or wrap, dietary choices and quality of ingredients play a big role. But sometimes, the lines between vegan (plant-based), vegetarian, and other diets can get hazy.

Let’s break down some common options and explore how they fit into different eating styles with the best health benefits!


#1 sandwich, which for me is a superfood sandwich:

Open Faced Nut Butter, Bee Pollen, Apple & Honey

Some sandwiches are comforting, some are luxurious and some—like this one—are pure nourishment wrapped in deliciousness. If you love a mix of creamy, crunchy, and naturally sweet flavors, this nut butter, bee pollen, apple and honey sandwich is about to become your new favorite.


What do you need to make this sandwich?

Bread, a good quality bread is a must. I used my favorite sourdough bread with flax seeds and molasses.

Nut butter, of your choice, in the video I used seed butter sunflower-hemp.

Apple, my first choice is an ultra crispy Granny Smith, but on the day of the video, I had only a red apple.

Bee pollen - Bee pollen adds a unique floral, slightly sweet and earthy taste to this sandwich, along with a pleasant crunch.


Why Add Bee Pollen?

The idea behind using bee pollen for seasonal allergies is similar to how a vaccine or allergy immunotherapy works. By exposing your body to tiny amounts of local pollen over time, you may build up a tolerance, reducing your reaction to airborne allergens like grass, trees or flower pollen. This works for my family, for example, my husband stopped reacting to seasonal pollen due to consuming bee pollen. One year I was not able to feed him with proper nutrition and didn't use bee pollen for his sandwiches at all due to my pregnancy morning sickness. That spring he had severe seasonal allergies from the pollen that he couldn't breath and ended up in the hospital.


#2 sandwich, another favorite of mine:

Creamy mascarpone meets silky smoked wild salmon, enhanced with fresh dill, zesty red onion—all atop a crispy slice of tangy sourdough bread. Whether you’re serving it as a quick breakfast, an elegant brunch, or a light lunch, this toast is guaranteed to impress.


What do you need to make this sandwich?

Bread - sourdough is always my first choice. Without a doubt, every good sandwich begins with good bread. I use my homemade bread all the time. My favorite sourdough bread with flax seeds and molasses

Salmon - cold-smoked salmon is the star ingredient, bringing a rich, silky texture and deep umami flavor that pairs beautifully with the creamy mascarpone and tangy sourdough. I always recommend that you buy wild caught or you can make your own, the recipe is here.

Dill - Infuses a sandwich and complements salmon: a perfect pairing.

Onion - just a bit of kick from red onion that mellows down with the Worcester sauce and helps tighten all the flavors together.

Mascarpone - The mascarpone in this sandwich acts as the creamy, rich, and slightly sweet counterbalance to the smokey salty salmon. Unlike cream cheese, which has a bit of tang, mascarpone is buttery and smooth, allowing the salmon’s delicate flavors to shine without overpowering them.

Let's talk for a minute about the last #3 sandwich for today is


Hot & Toasty BBQ Pulled Pork & Colby Cheese Wrap

This sandwich is pure comfort in my opinion. If you want a hot, melty, and crispy version of the wrap, then either prepare it grilled or as a panini-style sandwich. Both of these techniques take this sandwich to the next level! The cheese gets gooey, the wrap crisps up, and the flavors blend together beautifully.

What do I need to make this wrap?

Flat bread - some sort of wrap, that you can buy (but please watch for the ingredients list, the simple tortilla from a store has tons of chemicals added, canola oil, enriched flour, etc. In the video I used Armenian flatbread that is called lavash, and has only 3 ingredients in it (unbleached flour, water & salt). Use any kind you like, or make your own. Here is a recipe for Sourdough Pink Flat Breads.

Pulled pork - Pulled pork is the hearty, smokey, and juicy centerpiece of this wrap! It brings rich, slow-cooked flavor that pairs perfectly with Colby cheese and mustard. The tender, shredded texture makes every bite satisfying, while the BBQ sauce adds a balance of sweet, tangy, and savory goodness. In this video I used wild boar pulled pork and sneaked in some luscious cooked onion.

Cheese - I used Colby, but feel free to use any kind that can melt beautifully.

Mustard - I think it highlights the perfect smokey, sweet flavor with natural tartness and kick.

Ingredients for Nut Butter Sandwich

2 slices of bread (I used sourdough bread)

2 tablespoons nut butter of your choice

1 teaspoon bee pollen (from local beekeeper is best to use)

1 small apple thinly sliced (green apple is my preference)


Ingredients for Smoked Salmon Sandwich

2 slices of bread (I used sourdough bread)

2 tablespoons mascarpone cheese

1 tablespoon chopped fresh dill

1/4 red onion thinly sliced

1 tablespoon Worcester sauce

4 oz smoked salmon

1 small cucumber

Olive oil (for drizzling) optional


Ingredients for Pulled Pork Wrap

2 wraps of your choice

4- 6 slices Colby cheese or cheese of your choice

2 teaspoons yellow mustard

2 cups of cooked meat & onions (leftover BBQ pulled pork is perfect)


Directions

  • For the first sandwich, lay bread on a work surface and spread on the nut butter.

  • Sprinkle with bee pollen, then arrange the sliced apples. ENJOY.

  • For the second sandwich, first marinade the onions: add the sliced onion to the bowl and pour over Worcester sauce, let it sit for 10 minutes while the rest of the prep for the sandwich gets done. Now make ribbons out of the cucumber by simply using a potato peeler. First spread mascarpone on the bread, then spread marinated onions, dill and cucumber peels. Top with smoked salmon. Drizzle with olive oil and garnish with additional dill and then ENJOY.

  • For the third sandwich: warm up pulled pork with onion, lay the wrap and arrange the cheese in the middle, then spread cooked meat, layer with the onion and then squeeze some yellow mustard on top. Now roll up and take a big bite. To bring this sandwich to another level, and before biting into it, please place it on a hot griddle. Cook on both sides and press down with some weights. Cook for a few minutes or until the cheese melts. Slice and ENJOY!
