Why Shrimp?

Living in the lowcountry, there is an unwritten requirement to eat local seafood often. I think everyone who moves here becomes a heavy shrimp eater. There are plenty of these sea delicacies and in anyone's first year of living in this area, it is typical to want to eat them almost every day. There so many recipes with shrimp, such as Quick, Easy and Egg-free Shrimp Cakes

Local shrimp, so fresh and sweet, is just not comparable to the shrimp that comes in frozen bags from China (by the way the main source of shrimp in the USA).


I'm a believer that everything that grows together goes together. Even though blue crab is available in our waters, shrimp is truly abundant and more cost effective.

When you order stuffed flounder in a restaurant it will be stuffed with crab, and it's delicious, tender, and sweet. But blue crab is seasonal here, and it requires a lot of work to get one pound of crab meat. For the most part, in the US, food service industries using imported crabs from China, for crab cakes, etc. are more affordable but they lack freshness and quality.


I like to use shrimp in the same application and get a similar result. I'm promising that you will make this recipe again and again.

Ditch your breadcrumbs

My family isn't considered not gluten free eaters, but instead we are "not processed food eaters"! What I consider to be garbage crackers, such as ritz or any processed crackers, we don't have around our house. These types of crackers are not an option for me. I think they destroy all the benefits of any healthy meal. Just read the ingredients list on any boxed crackers and you will understand my feelings on this subject. I believe in consuming whole foods without any additives or preservatives.


Here are just a few reasons why you should include a real whole grain in your diet. I grew up on this grain and it's my second favorite grain (after buckwheat of course).


  • Millet is a naturally gluten-free grain.

  • Millet is a nutrient-dense grain, packed with vitamins and minerals, such as magnesiumphosphorusmanganese, and B vitamins. Traditional breadcrumbs made from refined wheat provide no nutritional benefits.

  • Millet has a lower glycemic index compared to breadcrumbs, It will keep you full much longer.

  • Millet adds a nutty flavor and a more textured, satisfying crunch compared to breadcrumbs.

Tips for Success:

  • Be sure to use fresh flounder!

  • Customize the filling! Use your favorite ingredients, play around with different herbs, grains, cheese, etc.

  • Don't over bake the fish! Check for doneness around 15 minutes to keep the fillets moist and tender.

Serves: 4 people

ingredients

Ingredients

4 flounder fillets (about 6-8 ounces each)

1 pound shrimp (peeled, deveined)

1/2 cup cooked millet (see this post on how to cook)

6 tablespoons melted butter (divided)

2 tablespoons olive oil

2 cloves garlic (graded)

1/2 cup fresh parsley, dill, chives (chopped)

1 tablespoon Old Bay seasoning (homemade I used in the video)

1-2 teaspoons pink salt

1-2 teaspoons freshly ground black pepper

1/4 cup Parmesan cheese, (divided)

2 tablespoons lemon juice (half lemon)

Zest of one lemon

Lemon wedges and fresh parsley for garnish


Directions

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.

  • Paper dry the fish fillets and lay them skin down into a prepared dish. Season with salt and pepper. Set aside.

  • To make the filling, in a food processor add shrimp, Old Bay seasoning, garlic and lemon zest. Pulse a few times until the shrimp become a paste.

  • Pour into a bowl. Add chopped herbs, half of the parmesan cheese, millet and half of melted butter (make sure it is not extremely hot). Give a good mix.

  • Divide the filling into 4 portions. Place each portion onto a filet and spread evenly.

  • In a cup with the rest of the melted butter add lemon juice, mix and pour evenly on the top of each fillet. Sprinkle on the remaining parmesan cheese.

  • Bake for 15 minutes, or until the fish is opaque and flakes easily with a fork.

  • Remove from the oven and garnish with lemon wedges and fresh parsley. Serve immediately with your favorite sides, such as steamed vegetables, crusty bread or rice.
