The 3 ingredient No Bake Waffle Cake, that I want to share with you today, is my sweet memory from childhood, my mom is not a baker, and she loved to make this cake for dessert, because, it is very easy to prepare—no baking required!—and it’s delicious. I hope to give you a glance of my own heritage.

I'm Ukrainian and love sometimes to share with you Ukrainian cuisine. This cake is a cake from my childhood; this waffle cake can be called Ukrainian waffle cake, but it's a pure Soviet invention! That time was in our past, thank God, and that time that will never come back, thanks to Ukrainian military defenders. This period of time is a sad part of Ukrainian history, not only for Ukrainians but for many other nations as well. The time when everything had to be the same: clothes, jewelry, life style, set of mind, and food, of course.
All we heard about was how bad food in the western part of the world was and how wonderful everything that we had was. The food was so uniform that I remember as a child the same menu on every occasion: birthday party, wedding, etc.
Only 5 cakes, 5 salads, 5 soups, etc. Soviet cuisine is very comparable to the Great Depression cuisine. This cake was a hit on every celebration.

WHAT DO I LIKE ABOUT THIS WAFFLE CAKE?
It's super easy to make; a child can do it.
Very inexpensive! Only 3 ingredients!
Can be made ahead of time!
Can last for a week room temperature!
Can be cut as a little squares and served as a cookies, or made nicer with an extra top layer of cream and garnish with chocolate, nuts and sliced as a cake.
WHAT DO I NEED TO MAKE THIS WAFFLE CAKE?
Plain wafers – round or square (9 layers, 9-inch diameter)
I prefer no coloring added.
Caramelized sweetened condensed milk - another name for it is Dulche de Leche.
Soft salted butter - always the best quality that you can find.
Nuts - I used chopped walnuts, cashew and cocoa nibs for the garnish. This is totally optional, most of the time people don't cover with cream the very top layer and don't use any garnish either.
What is Dulce De Leche and where can I buy it?
Dulce De Leche are fancy words to describe simply cooked/caramelized sweetened condensed milk.
There are only 2 ingredients: milk & sugar! That's it!
Just about every European grocery store will have it. Also, Latin American countries have used this product for many, many decades. So, if you have one, go and get it. It's great to have on hand. Sometimes, I enjoy treating my boys after school with a snack of sliced green apples and Dulce de Leche dip. Yummy!
But what to do if you can't find it in the store, well, do what I do and what our parents used to do: Make it yourself. It's so easy.
Here is how to do it:
Place one can or a few cans of sweetened condensed milk in a pot and fill it with water and turn the stove on low heat and boil for 2 and half hours or use a crock pot (which I prefer) and set on low and cook for 8 hours or leave overnight.
Let it cool and store at room temperature just like any canned food. Add to many desserts or eat as it is. To serve, first warm it up a little bit in order to achieve a nice consistent drizzle.
Where can I find the wafers?
I’ve only been able to find them at European stores. Poke around; you probably have one nearby. If not, Amazon has everything, they cost almost nothing. Here is the one I like, no color added.

Total time: 1 hour and 15 minutes
Yield: 12-13 kid-sized servings

Ingredients:
1 package plain wafers (see note above where to shop for them)
2 (14 oz) cans Dulce de Leche (cooked/caramelized sweet condensed milk, see note above)
7-8 tablespoons soft SALTED butter
1/2 cup chopped walnuts and cocoa nibs (for garnish this is optional)
Directions:
To make the cream: in a mixer combine cooked condensed milk, softened butter and using a whisk attachment, beat on high speed for 2 minutes, scrape once a while.
Spread cream on the wafers, for each layer, make sure it gets 2 or 3 tablespoons of cream, making sure to reach the edges. The top layer decorate with nuts if you like to. But if you do, like I did in the video, carefully cover cake with a cake carrier top.
Let it sit for a minimum one hour, or best overnight..
Then, slice cake and enjoy. With any leftovers Dulce de Leche cream make a perfect snack by serving with green sliced apples. Caramel and apple is an all time winner combo.
