Here’s how to make a frozen ginger pure:
1. I buy at least 1 pound of fresh ginger root (preferably organic).
2. Scrape the skin off (this step is optional) and blend with 2 tablespoons raw honey (local, of course!). Adding lemon juice is also a great idea.
3. Scoop the puree into small freezer-safe containers and freeze until you’re ready to use.
4. Keep in a freezer for up to 6 months.
I find that 1 pound usually lasts my family for the month. I add it to other dishes, too, like stir fry.
